Some friend invited us over for stuffed burgers.  I’m trying to eat healthier these days, so I needed to come up with a Stufz burger that won’t go straight to my thighs.  :)  My solution is the Chicken Gyro Stufz Burger.  Here’s how to make it…

Chicken Gyro Stufz Burger in Romaine Lettuce Wrap

Ingredients (for 2 Stufz Burgers):

  • 1 pound lean ground chicken
  • 1 teaspoon of Mediterranean Seasoning (I used Steven Raichlen’s Mediterranean Barbecue Rub)
  • 1 medium tomato, diced
  • 1/2 cucumber, diced
  • 1 teaspoon apple cider vinegar (optional)
  • 1/2 medium onion, finely diced
  • Crumbled Fat-Free Feta Cheese
  • Romaine lettuce leaves, cleaned and dried

Instructions:

Do all the prep work first and it will all come together quickly at the end.  Start by dicing the tomato, cucumber, and onion.

Put the cucumber in a small storage container with the apple cider vinegar.  Shake it up to coat the cucumber.  You essentially are making very quick pickles.  They’ll have a slightly acidic tang to them which helps make the burger taste fresh.

Next, mix the Mediterranean Seasoning into the chicken until it is well blended.  Put the chicken in the freezer for about 10 minutes to make it easier to work with in the Stufz Stuffed Burger Maker.

Divide the chicken into thirds.  Take one of those chunks and divide that in half.  You now have 2 larger pieces for the bottom portions of the burgers and 2 smaller pieces for the tops.

Put one of the large pieces in your Stufz Stuffed Burger Maker and press it into a bowl shape.  Add the tomato, cucumber pickles, onion, and feta cheese.

Make a flat patty out of one of the small pieces of chicken and place it in the Stufz.  Seal the burger and repeat for all the burgers you are going to make.

Grill over medium heat until cooked through.  Since there’s nothing oozy in this burger, it holds together quite well.

Wrap the burger in a couple of romaine lettuce leaves and enjoy.  You can also put it on a bun.  Nothing wrong with that.

Coulda, Woulda, Shoulda’s

  • I also added some thinly sliced cucumbers on top of the burger for a little more texture.
  • Mix some diced cucumber and onion with some sour cream or plain greek yogurt to make a tzaziki sauce to go on top of the burger.
  • Put the burger on flatbread or in a pita
  • Add some jalapenos or some hot sauce if you like a little heat.

Instant Mashed Potatoes Make Great Camping Food

It hadn’t occurred to me how great instant mashed potatoes are for camping until our Memorial Day weekend camping trip.  We brought a pack of mashed potatoes with us to go along with our BBQ Chicken Foil Packs for dinner one night of the trip.

After getting drenched while on a walk and with the rain not slowing down, we hunkered down under our canopy.  We decided that it would be nice to warm up with a hot meal for lunch instead.

The rain finally broke so I started the fire for the foil packs.  Liz boiled some water for the potatoes.

The type we bought, as luck would have it, only requires water.  No milk or butter was called for (although you could add it if you wanted to).

All you have to do is pour the potato flakes into the boiling water and stir.  Really easy.

After lunch, we both felt much better.  We started to dry out and we were warm enough to move on to the day’s next activity.

  • Dry flakes means you don’t have to worry about spills

  • Warms you up on chilly nights

Make a better burger with Cast Iron

If you’ve known me for more than 3 minutes, you know that I like to grill.  I also like a really good burger (see Stufz).  The best burgers I’ve ever had weren’t cooked on a grill.  How could that be?

Cast Iron Magic

The secret to a fantastic burger is to cook it on cast iron.  You could use a cast iron skillet.  I use a griddle.  I put it on the grill right over the coals and let it heat up.  Add a small amount of butter or oil and drop the burger patties on it.

The Restaurants’ Secret

Why are restaurant burgers so good?  The flat top grill.  You can replicate that flavor and texture.  There are a couple of benefits to cooking on a cast iron griddle over a charcoal fire.  First, there are no flareups because the grease from the meat isn’t dripping onto the hot coals.  Second, you can actually sear the meat without burning it.

When cooking over charcoal, you get the added benefit of real smoke flavor.

Go from Beginner to Expert

A common problem for backyard grillers is overcooking some of their food and undercooking the rest.  Cast iron does a great job of creating balanced, consistent heat.  There are no hot spots.  It is all about the same temperature.  This characteristic makes it very user friendly.

Dig that cast iron skillet out of the basement and put it to good use.  You won’t regret it.

Join me at the Quitter Conference in Nashville

I’ll be at Jon Acuff’s Quitter Conference in Nashville, TN in September.  The Quitter Conference is a gathering of a couple of hundred people to help each other sort out how to close the gap between a day job and a dream job.

The book “Quitter” by Jon Acuff has been transformational for me.  It helped me see my day job for what it is — a place where I am honing skills and gaining experience while also taking advantage of the opportunities that paycheck provides.  Money creates options.  I’m going to invest some of that money into myself by traveling to this conference and to spend face time with others in the same boat.

 

If you’re going to the conference, I’d love to meet you.  If you haven’t considered going, now is the time.  Tickets are still available, but they have sold out the first 2 so I assume they won’t be for long.
