BBQ Chuck Roast Flatbread Quesadillas

In my post, The Best Dang BBQ Sandwich You’ve Ever Had, I showed you how to make a BBQ Chuck Roast.  I also told you that when I fire up the smoker, I like to save some of the spoils for later.  Today, I’m going to show you how to make a Flatbread Quesadilla using that left over BBQ Chuck Roast.

Ingredients:

  • Flatbread (store bought or use my recipe)
  • BBQ Chuck Roast (You could also use grilled chicken, steak, pork, etc.)
  • Shredded Cheese
  • BBQ sauce/dressing/sour cream, etc.

Equipment:

  • Skillet and/or
  • Griddle
Chop sliced BBQ chuck roast into small pieces so they are easy to eat.

Put BBQ chuck roast into a skillet and warm it through.

Place a piece of flatbread on your griddle.  Add cheese, BBQ chuck roast, BBQ Sauce and whatever else you want.  Top with another pieces of flatbread. Heat until cheese is melted.

Slice the quesadilla and serve.  Add a spoonful of sour cream and some hot sauce if you'd like.
