Ranch Chicken and Potatoes are an easy to make and healthy dinner option and the cleanup is simple too.
Ingredients:
Boneless Skinless Chicken Breast or Tenderloins (we used tenderloins)
Diced red potatoes
Peas
Carrots
Ranch Dressing
Salt & Pepper
Shredded Cheese (optional)
Equipment:
Heavy Duty Aluminum Foil

Lay out 2 layers of aluminum foil, 12x18 inches, one on top of the other. Place a serving of diced red potatoes on the center of the foil.

Place foil packs on grill or stove over medium heat for 12-15 minutes or until chicken is cooked through and potatoes are tender.

Open up the foil pack to let the steam out. Sprinkle with shredded cheese if you'd like and dig in! When you're done, just throw away the foil.

We should have used fresh peas and carrots instead of canned (Duh!)
It could have used a bit more salt and pepper
We should have added the shredded cheese.
Overall, not a bad meal. It was a nice change of pace from the usual grill flavor. The foil packs make the food taste more like it was baked at home so it felt like a lighter meal.
