Here’s a quick and easy dessert (breakfast?) recipe to make on a campfire or a backyard grill. It is made in individual servings and cleanup is a breeze. This is a really delicious recipe. I was surprised how good it really was.
Pineapple Upsidedown Donut Cake
Ingredients (per serving — you can do the math):
1 cake donut
1 tbsp butter
1 tbsp brown sugar or cinnamon/sugar blend
1 slice canned pineapple
2 tbsp pineapple juice
2 pieces of foil large enough to wrap donut

Place donut on aluminum foil

Spread butter on top of donut

Sprinkle brown sugar or cinnamon/sugar on top of donut

Place pineapple slice on top of donut and pour 2 tbsp of pineapple juice on top

Wrap foil tightly around donut then wrap the second piece of foil around foil packet

Place foil packet on a bed of coals. Cook for 6-12 minutes, flipping frequently. Cake is done when pineapple is warm and soft and sugar has liquefied.

Place cake in a bowl or eat straight out of the foil

Add a scoop of ice cream and enjoy!
