This summer, Saint Paul, MN invited several food trucks to park at Kellogg Blvd. and Wabasha St. on Wednesday’s at lunchtime. We walked down there to see what it was all about. I’ve been a big fan of the concept of food trucks and street vendors for a long time. It’s nice to see them gaining a real following in the Twin Cities. Food trucks and push carts lower the barrier of entry into the restaurant scene and provide an additional revenue stream for existing restaurants. Plus, there’s nothing like eating something on a bun while standing on the sidewalk in the city — especially when you are joined by a few hundred other folks with the same idea.
There were 6 vendors lined up on Kellogg Blvd at about noon. Here’s today’s roster:
Fork in the Road — Classic American lunch options like salad, subs, and brats. What makes them special? Fresh Pineapple Snowcones!
Magic Bus Cafe — Mainly serves hotdogs. There are several variations available. What sets them apart? Seating for 8 inside the bus!
