Southwest Sausage Hash

Southwest Sausage Hash was born out of a need to use up leftover ingredients from our Campfire Chicken Nachos.  It’s very quick to throw together and will fuel you for a day of hiking.

Ingredients:

Hashbrowns
Breakfast Sausage (bulk, links, or patties)
Black Beans
Corn (we used corn with chilies often branded as “Fiesta Corn”)
Salsa
Shredded Cheese

In a skillet or on a griddle, brown the hashbrowns.  The secret to good hashbrowns is to leave them alone until they are ready to flip.  Brown the sausage in another skillet.  Add the corn and black beans until heated through.

Add hash browns to the sausage, bean,corn mixture.  Put on a plate.  Add shredded cheese and salsa.

Add some scrambled eggs
Sour cream would be good on top.
